Cranberry Macadamia Cookies

Okay, last cranberry recipe.

Rating: 7/10
Why: Everything is a 10 EXCEPT for the fresh cranberries. Bad choice. These cookies would be perfect if only I had used craisins instead. I realize now that fresh cranberries don't belong in cookies. They are just too tart and don't work. From now on I will strictly stick them in muffins and...chutneys. (?) Lol. So make this recipe with craisins and you will have perfect cookies!





Cranberry Macadamia Cookies
Makes about 2 dozen


  • 1c butter, softened
  • 1c granulated sugar
  • 1c brown sugar (not packed)
  • 2 eggs
  • 1/2 tsp salt
  • 1tsp vanilla extract
  • 1tsp baking soda
  • 1tsp baking powder
  • 2-1/2 c flour
  • 1c oats
  • 1c Craisins
  • 1/2c chopped macadamia nuts
  • 1/2c white chocolate chips


Directions:

Preheat oven to 350F and line baking sheets with parchment paper.

In a medium mixing bowl, combine the flour, baking soda, baking powder, craisins, nuts and chocolate chips. Set aside.

In a large bowl, cream together the butter and sugars. Add the eggs and vanilla and blend well. Then stir in the oats. Gradually blend your dry mix with the wet one. Drop by the tablespoon onto your baking sheets and bake for 8-10 minutes. Let cool completely.
